Are you a real skeptic or a true believer?
Next up in my “nerd cocktail” series is an homage to my all time favorite sci-fi heroine, Dana Scully. I love the X-Files. I grew up watching it, have had many discussions about it, it’s my go to when I’m not feeling well. When I was little I wanted to grow up & be Dana Scully, or at least, wanted to be a forensic medical doctor for a time because of her. Last year I did a (not great) cosplay as her. So it’s only natural that I’d make a drink in her honor. I wanted to make something classic with a bit of a twist. Serious with a hint of playfulness. Straight forward yet complex. Also, something red. So with all that, I give you the Real Skeptic, a riff on a classic Negroni.
In this version I replaced the sweet vermouth with my pineapple infused rum & shifted the ratios. I cut the gin in half & added that portion to the rum so that the pineapple flavor wouldn’t get lost under the Campari. I finished it off with a few drops of Havana & Hide bitters from 18.21 & some expressed lemon peel.
1.5 oz pineapple infused rum
1 oz Campari
.5 oz gin ( I used New Amsterdam)
5 d Havana & Hide bitters
Add all ingredients to your mixing glass & stir with ice for 15 seconds. Strain into your favorite cocktail glass & express a lemon peel over the drink. Sink the lemon peel & enjoy! (Your preference as to making this drink up or straining it over a large cube. I drank mine up.)
